The Sailboat is the next step up in health and speed from any Raft.

The Longboat improves on the Sailboat with more health at a higher craft level.

The Big Ol' Boat is tied with the Pirate Ship for the fastest boat in the game, and it has the most health of any boat you can craft.

The Pirate Ship matches the Big Ol' Boat's top speed, but with half the health and a much higher Leaves cost.

The Gingerbread Sailboat is a seasonal boat bought from the Mojo Shop during the Christmas event, matching the regular Sailboat's stats exactly. It was unlocked on day 24 of that event's advent calendar.
